The TacoDeli tortas are pretty damn good, but I might have to try fixing one your way. Milanesa is the really thin-cut steak, right? And I assume you saute it after breading it?
You know what, I haven't tried the TacoDeli Tortas, and seeing as how they really have the right personnel in the kitchen, it's probably something I should order next time. Thanks for the tip. As far as my own way of making Milanesa Torta, here is how my mother taught me how to do it:
1. Make sure you get the steak as thin-cut as you can. Season the steak as you wish, but don't over do it.
2. Take saltine crackers (not flour) and ground them all up until you have a really fine power. This is why you don't over season the meat, the salt in the crackers is now part of the crust.
3. Dip the steak in egg-batter to allow the saltine cracker powder to bond to the meat.
4. Don't use a deep frying method to cook the steak, instead use a frying pan to cook the meat only to a certain degree of readiness.
5. Make sure you have the oven ready to put the Milanesa in the oven to finish cooking. I wish I could tell you exact times when to make the transition, but I don't usually keep a timer on anything, I've learned to do this simply by look and smell.
6. While the oven is finishing cooking the meat, prepare the torta, by slicing the Bollilo in half, slightly butter on the two halves and then on a grill (we have a pan grill that we use), toast the bread.
7. On the bottom half of the sandwich, put a very thin layer of refried beans. You can choose what type of beans you want to use, either spicy or mild.
8. Place the Milanesa on top of the bottom half of the Torta (where you just added bean spread).
9. Take the top half of the Bollilo and add a spread to it, I still like to use mayo sometimes, but have experimented with salsas as a spread before. It's been unique, but the tried and true way is to use mayo.
10. Place the avacado slices on top of the milanesa and season the slices ever so slightly (again, don't overwhelm the meat with too much additional flavors and spices).
11. Top it all off with lettuce and tomato and then place the top half of the Bollilo on top of it to have your Torta Sandwich.
Take a pair of toothpicks and place one on each half of the Torta and then cut the sandwich in half. Place it on a plate with the steak fries and there you have it.
