BBQ
« on: January 31, 2014, 03:44:59 pm »
There oughta be a law requiring every Texan to eat BBQ on Fridays when the temperature is between 50 and 80.

Hyden Family BBQ in Teague.  Excellent.
The rules of distinction were thrown out with the baseball cap.  It does not lend itself to protocol.  It is found today on youth in homes, classrooms, even in fine restaurants.  Regardless of its other consequences, this is a breach against civility.  A civilized man should avoid this mania.

I've been going to Gaitlan's a lot lately, usually when I'm sick of my office and need a good head-clearing.  It takes me about an hour to get there, stand in line, get a brisket sandwich, and eat it in my car on the way back to my office.   Let me clarify: it takes about an hour on a really cold day when there's no crowd.  They have, I swear, the most inefficient service for good friendly people of anyone ever.  They really need an efficiency expert.

That said, it is one great brisket sandwich.  Fine brisket on a perfectly toasty bun.  Good sauce too, and I usually have it half sauced and half straight.

I never do anything half sauced.  It's all or nothing.

Really?  I'm convinced that I'm at my very best half-sauced.

I was supposed to fly back on Monday.  But a mechanical failure followed by the freak "blizzard" you've probably heard about, and our family found itself stuck in Lookout Mountain, Georgia for a couple days longer than we would've preferred.  One of the side effects of our sojourn was an opportunity to try out the local 'cue.

As you'd expect, it's pork.  For that reason, it will never be superior to even the most half-assed brisket.  But at the Purple Daisy Picnic Cafe, they have this slaw.  Man, this slaw.  Fine chopped greenery and an excess of mayo keeps things hanging together more like potato salad than your usual pile of wet cabbage, and then there's the cayenne.  Tons of it.  Makes your lips burn.  That slaw on a bun with pulled pork and a sweet, tangy sauce, and suddenly a third trip to the airport doesn't seem quite so much like cleaning out the Augean Stables.
Drinking for two.

If someone would figure out how to open a decent Vietnamese restaurant around here I would probably just go ahead and buy my burial plot.

Hit up Smitty's in Lockhart Sunday on the way home from a hunting trip.  Damn it was good.

"Louie Mueller Barbecue, an iconic Texas brand, has welcomed pilgrims from throughout the state, the country and the world to its doors in Taylor since 1949. Now that brand is ready to enter the Houston market."
There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body. Now you stick to that, and everything else is cream cheese.

I think that may be the best barbecue in Texas--I'd even take it over Franklin's.  Ok, maybe not. That photo's from Camp Brisket, where Mueller did the Friday night dinner.

That would be most welcome.

Congrats.  Louie Mueller is my all-around favorite BBQ.  A tiny notch under Franklin in terms of quality but much less of a pain in the ass.

I've been hearing rumors about a joint venture between Smitty's and Kreuz's in Austin.  Actually on 620 South of Laskeway.  Inursting if true.

It's not called "Schmidt's and Giggles"?  WTF?

A major barbecue place in Bastrop seems like a no-brainer, and nobody does sausage better than Southside Market.
