I am enjoying a Weihenstephaner Original with a Sacho Panza Dulcinea.

On a side note...it's hotter than fuck here on my back patio right now. 
The rules of distinction were thrown out with the baseball cap.  It does not lend itself to protocol.  It is found today on youth in homes, classrooms, even in fine restaurants.  Regardless of its other consequences, this is a breach against civility.  A civilized man should avoid this mania.

My work has a very strict policy regarding beer.  Must always have on hand.  Cold.  Not a bad environment, I must say...

Working again this evening.  The worst part about working for a bank is all of the after hours work.  But, at least I get to do it from home.
Right now I'm having Miller High Life, cans.  It works, good beer.  This past week I had a sixer of Lawnmower and one of Summer Pils and they were as great and dependable as always.
So what exactly is a Weihenstephaner Original and/or a Sacho Panza Dulcinea?  I could google but I'm lazy.

I should, I drink it more than I drink Guinness, at least in the summer. 

ETA: Miller is more like having a regular microwave dinner or something because you're too lazy to cook, as opposed to those nights when you go out and grill/bbq a nice steak.


And, it's raining like crazy out here in Katy for once!

Excellent. I assume you did a legitimate deep fry on those puppies. What did you fill them with, and what did you sauce them with?

A beer and a cigar.  Weihenstephaner is quickly becoming one of my favorites (beer).

I got unlazy and googled.  I figured the Weihenstephaner was a beer, but didn't know if a Sanch Panza Dulcinea was some sort of cultural reference I wasn't aware of.  Seems to be happening to me a lot here lately, I gotta get out more.

Broiling them in the oven is death; as you have discovered, they'll be too mushy to work properly.

If you've got gas burners, turn the burners up to high and put the chiles on there and turn them with tongs. When they're blackened, take them off, put them in a plastic bag and throw them in the freezer for 15 minutes. The skin will peel off easily after that.

I've also peeled them by cooking them in oil first until the skin blisters. This yields a great chile, but it's a bit of a pain, because you have to figure out how to deal with a quart (or more) or peanut oil.

I'm sentenced to the hell of an all-electric kitchen, so I try to blister the chiles on the electic burners and finish them off with a kitchen torch. Sometimes I win and sometimes I lose. If you've got a gas grill that will let you get close to the burners, that can work, too.

Depending on the quality of the chile, sometimes you can rescue things by putting the chiles in the freezer until they firm up somewhat. Then you can stuff them and put them back in the freezer for a while before you batter them.

And if everything fails, you can still have a nice meal by building a layered casserole with the chiles laid flat on top of your filling and topped with beaten eggs and then baked. It's not the same as a genuine chile relleno, obviously, but after a few beers, it's still pretty damn good. The tangy taste of a good poblano is really enjoyable.

You can definitely get the skins off of those bastards by putting them directly on an electric burner but it is indeed a pain in the ass. You really don't have any decent alternative, though. But nothing beats a good flame, even a gas one.

I like to wrap them in a damp paper towel before putting them in a plastic bag but I don't put them in the freezer. I'll try the freezer method and see how it goes.

I put them in the freezer in a (possibly vain) attempt to stop the cooking. Makes me wonder if throwing them in an ice bath might be even more effective. I've never tried that.

I, too, am cursed with an all-electric kitchen, so I was left to broil them in the oven.  They were an absolute bitch to peel, but the batter was hefty enough to cover the tears in the pepper hulls.  I stuffed them with chorizo, cachega (Mexican goat cheese) and cilantro, battered with the beer batter, and then rolled it in cornmeal.  I've got an immersion fryer, and 7 minutes in 370 degree peanut oil made 'em nice and crispy.  Despite the tears, none of the filling leaked out or anything.  I was pleasantly surprised with how they turned out.  The wine was smoky and lots of berry, so it worked pretty well with the peppers.

I haven't ever thought of using the freezer or ice bath (at least for chiles).  I'll give that a try next time.  I did try a dry griddle pan, and the chiles didn't overcook, but it took forever and it was still a chore getting the skin off.  Putting them in a ziploc definitely makes it easier.  I've also read that you can seed the chiles before roasting, but I've never tried that.  I've always left 'em whole.

I'll try putting them directly on the electric burner next time.  Or just spring for a gas grill.  Last time I made them, I had so many toothpicks trying to hold it together it was not even funny.  But they still tasted phenomenal.

And thanks for the Bed, Bath, and Beyond link.  I'm looking at buying a dedicated fryer and I like that it requires less oil.  Last time I made these, I only fried a couple chiles, and decided to save the oil.  My wife made some brownies some time later, and didn't realize that the oil she used had already been fried once.  I'm still sleeping on the couch.

It's a great fryer.  Because it rotates, things don't retain as much oil, so it's lessy greasy on your fingertips (though still plenty greasy inside).  The capacity is pretty small, though.  When I made the rellenos, I could only fit one in at a time; if I'm doing catfish, same story: one big filet at a time.

But the size is worth it, for the consistency, safety, and ease of cleaning.

While we're giving out equipment recommendations, I want to give a shout out to a silicone mat that I got from the King Arthur flour folks. This thing sticks to your counter like nobody's business, but if you flour it lightly you can roll out pie crusts, tart crusts and the like without them sticking at all. Clean it up with a wet cloth and you're good to go for the next session.

So here's some good news: the Oktoberfest seasonals are starting to come out. I was at the Randall's on Westheimer at Shepherd and they had both Saint Arnold and Sam Adams (which, at the risk of cementing my status as a heretic, I must say is pretty darn good).

I had the Saint Arnold's Okto at the Saucer last Thursday. It's pretty damn tasty.
And Sam Adams Okto is about the only variety they do at all well.  Not up to par with some other choices, mind you, but easy to enjoy.
