Actually "Z okazji urodzin!" is all that is needed (and more typical).  The rest of it is "All the best" ... roughly equivalent to "Best wishes on your birthday!'

I was sure that she was Eastern European. As far as certainty of Polish descent, no, I wasn't certain about that.

My wife's last name is Sobczak. She's a Polish thoroughbred. 100% Polish. We eat lots of Polish food and observe many Polish traditions.

I also am 100% Polish.

My family doesn't follow a lot of the food traditions, mainly because the resources to cook some of them weren't available in the area they settled, the exception being cabbage and dumplings.  One tradition that we do follow is having the close-knit family.  I know all of my cousins, their spouses, kids and in some cases grandkids.  For the most part, my siblings and cousins have married other polish people from the same area.

My dad started school speaking Polish, my mom understands Polish but doesn't speak it.  Her grandparents pushed English to be taught primarily.  My Grandma Wiatrek used to try and cheat at Scrabble by using Polish words.  I know very few words/phrases.

So, if you are ever in the area south of San Antonio (Wilson and Karnes county - now also known as Eagle Ford) you'll probably run into a cousin of mine.

Mrs. Happy went to Poland on a religious pilgrimage last year and absolutely loved it. She can speak some Polish, and her parents, whose parents came to the U.S. speak Polish with her, although their Polish is somewhat dated back to the period that their parents immigrated to Cleveland. As you know, languages change over time. Mrs. Happy grew up in a Polish neighborhood and attended a Polish Catholic church, St. Stanislaus. She also is very close with her extended family.

Yep, Panna Maria.  Czestahowa also has a gorgeous church.  Koscuisko has a nice church, but I think Cestahowa's is the nicest.  My parents are from Koscuisko.

I've wanted to go to Poland for a long but haven't done so yet.
