Friday Night Supper Thread

Mustard greens, purple hulls and cornbread...with sweet tea. 

I'm in heaven.
The rules of distinction were thrown out with the baseball cap.  It does not lend itself to protocol.  It is found today on youth in homes, classrooms, even in fine restaurants.  Regardless of its other consequences, this is a breach against civility.  A civilized man should avoid this mania.

Being the father of two teen aged boys, I can only say that I love the differences in my sons' personalities. The variety is wonderful. My oldest is a fairly typical reserved, cautious first born child, while my youngest is a ready shoot aim sort of kid. But he can throw a baseball at 14 almost as fast as I ever could. And he's lefthanded.

I was really hoping for some collards, but they didn't look too good.  Plus with the warm winter, they've probably already gone to seed, and then they get bitter.  So I went with the mustards.

Well for starters, don't fucking boil them.  I use bacon in mine, but ham hock, fatback, any pork thing will work.  I cook the bacon first, because if you don't, it won't brown.  Throw in your cut up greens.  I pull mine off the stalks, but you don't have to.  Add just enough liquid to keep them from sticking, a couple of tablespoons.  They just wilt in their own juice.  Stir ocassionally and don't cook them into mush.  Salt and pepper.  Enjoy.

I don't.  Of course, I don't add it to my collards either, unless they're particularly bitter.  But if you get them fresh, after they had some frost on them, you shouldn't need sugar.  Mustards don't take near as long to cook as collards either.

I don't like my greens with Tabasco, or any kind of pepper juice or sauce.  I don't like any heat at all.  It takes away from the natural greens flavor, IMO.

The best pizza in Houston is Brothers Pizza in Greenspoint Mall.  I'm not kidding.  It's as New York as you can get.

That's fine eatin'. I've got some purple hulls in the freezer. We buy them every year at market and put them up. Much better than black-eyes. I love all greens.

I like turnip greens, made with shredded ham and a dash of sugar.  But you have to pick them before a certain date (which I have no idea what that date is) or they'll make you really, really sick.

And Grimaldi's in Sugar Land is the best pizza I've had in the Houston area.  Their coal-fired oven makes a beautiful pie.  Ask for it "extra crispy" so you make sure they char it enough.

I am in Austin, yes, and there's no Grimaldi's here but I knew there was one on the west side of Houston somewhere. I think Robb Walsh wrote about it and said the same thing about ordering it crispy - they started out making it Brooklyn style but the locals all wanted it soggy. Philistines.

I like purple hulls better than regular black eyes (though they're technically the same species).  I think the purple hulls are a little more tender and creamier when they're cooked.  Collard greens are my favorite greens, but it's harder to find good ones these days.

There are 2.  The original is still on Norfolk, the other is next to what was once Rockefeller's.  It ain't no wimpy thin-crust pizza, topped with a sprig of basil and a couple of sliced tomatoes.  It's a substantial American pizza, with plenty o' cheese, sausage, and plenty of other stuff.

The ones at Burnet & Anderson and 29th & Guad are definitely still open. I don't know if there are any more locations. At one point in the late 80s/early 90s they had probably 8 or 9 locations, but they've apparently contracted to concentrate on the areas where they know they've got a solid market.

Star is good, and it's unique.  Not my favorite style of pizza, but it's tasty enough.

Growing up and then living in the Heights (as a young married man), Star was the best. The one near Hwy 59 (Norfolk) was always good. When I took my wife there for the first time, she told me it was just like Chicago-style pizza. She was born in Chicago and moved to Texas when she was a pre-teen. The difference though was how fresh those heavy duty pies were. And they once used to serve New York style pies too, but it was rare when we ordered one. So we once took my wife's boss (she had two, husband and wife who owned the company). They were both from New York (State). He said the New York style pizza at Star was really close to authentic and proceeded to show me where they went wrong on what they called New York style. I didn't really care much, I loved the other style any way.

Since then, I've grown to love thin crust, oven baked pizza, even over the thicker style of pizza. I took my family to Manga's pizza here in Austin once and we all were disappointed. First thing my wife said was "It's nothing like Star pizza, that's for sure". Love that woman!

I am in Austin, yes, and there's no Grimaldi's here but I knew there was one on the west side of Houston somewhere. I think Robb Walsh wrote about it and said the same thing about ordering it crispy - they started out making it Brooklyn style but the locals all wanted it soggy. Philistines.

One last note on Grimaldi's. I saw something about them on The Food Network and their expansion outside of Brooklyn. They claim the NY water is a key to their formula and they import NY water to all of their outposts. Interesting I thought.

Yep, it's actually "poke salat", but "salat" is just German for "salad", so I guess it's the same thing.  And you better cook it right, or poke salad *will* be the last thing you ever eat.  Personally, I won't touch the stuff.
Actually, "salat" is German for "lettuce", though it also applies to a number of other greens.  So it's still pretty much the same thing.

In all seriousness, the first 5 courses were one bite hors doeuvres (thus why they don't have pairings - the champagne was for all of them). The first 3 real courses were very light (not a very big foie portion). My wife often hits the wall during tastings, but no problem finishing tonight.

It was orange flavored egg cream - the syrup was orange instead of chocolate, but the milk was infused with cocoa nib so it had a mild chocolate thing going as well. I am not huge on orange-choc pairing, so it was just okay.

Halfway through dinner at Per Se - really almost exactly French Laundry.

Book Of Mormon was pretty funny - almost can't believe it exists as a play though.

Pretty lax schedule yesterday - lazy morning, 11am brunch, 2pm play, 6pm dinner, come back and watch some basketball.

Today is modern art museum, Bar Room at Modern, Natural History museum then Empellon Cocina for dinner.

Anybody else tried Pizarro's out on Memorial? They have an Italian-made brick oven, make their sauce and mozzarella in house.  Best margharita I've had in Houston.

Also, our Friday night supper was at Uchi's new Houston digs.  Still sorta feels like Felix, but the food was phenomenal.  Opted for chef's choice, and almost everything of the nine or ten courses was spectacular.  The sea bream sashimi with lemon zest and fresh mint was a particular standout.

Yes, salt.  That spice that makes everything taste better...that chefs typically don't use enough of because of the general public's micsconception that it's evil.

If an establishment wants to go crazy with the salt, that's fine.  I won't go there*.  Some people don't go to Indian restaurants because they don't like the spice.  Salt is more common than, say tumeric, but that doesn't mean everyone has to cook everything in 99% brine.  They have to make it taste good for the majority of their customers, not the few who can drink seawater and like it.

If an establishment wants to go crazy with the salt, that's fine.  I won't go there*.  Some people don't go to Indian restaurants because they don't like the spice.  Salt is more common than, say tumeric, but that doesn't mean everyone has to cook everything in 99% brine.  They have to make it taste good for the majority of their customers, not the few who can drink seawater and like it.

Of course it's possible to over-salt food.  My point is that suggesting anyone intentionally under-season food while preparing it in order for the consumer to apply however much table salt he or she wants doesn't do the trick either.

In a perfect world, cook it right and leave the salt shaker off the table.

I read that people's taste receptors on their tongue can vary by 5 orders of magnitude from individual to individual. Its probably true that some people are way more sensitive to salt than others, the same way some people can't eat spicy food.

Right, the problem is people have very different salt palates. My wife and I both have fairly salty palates - definitely above average. I don't expect chefs to cook to that level (even though in theory I agree with Bench), but do not like the trend way from having salt on the table.

No Empellon - wife has unfortunately one down with some kind of stomach bug. Hopefully a short lived one (Le Bernardin tomorrow). If she settles in/falls asleep, I may sneak out for something (thinking maybe Fatty Cue).

Go somewhere and have a glass (or two) of Louis XIII and a Montecristo #2.  THEN you can claim you've done it right.
The rules of distinction were thrown out with the baseball cap.  It does not lend itself to protocol.  It is found today on youth in homes, classrooms, even in fine restaurants.  Regardless of its other consequences, this is a breach against civility.  A civilized man should avoid this mania.

You're my gastric/culinary hero, Biz. You went to more nice restaurants in one week than I've been to in my entire life. Hell, I didn't even get to eat at the French Laundry when I was there to meet with Keller back in 2006.

The chefs tasting - its on the website (can't link it on this terrible blackberry). Not very filling really - all fish. Actually dropped my wife off at the apartment and snuck over to west village for iberico and cider at tertulia.

Highly recommend the dutch - get the fried chicken$ Very Loud.

Lunch at Del Posto also excellent, and may be the best bargain in town (four courses + amuse and mignardise for 39).
