I had this bad boy at BRC.  Not for the feint of heart or sober of mind.  Double meat, double cheese, double bacon and double fried egg.

They had the "Double Double" as a burger special, and also a "McCock", which was a single burger with an egg.  We merged the two for the "Double Double McCock", which, the chef insisted, had to have double egg to keep the theme intact.  Who were we to argue...

When I was on Atkins, I went from burger stalwart to McBurger outlet and came to the conclusion that stripped of the extras, they all taste almost exactly the same. That was a very sad realization. Dirty's, Whataburger, McDonald's, Five Guys, whatever - it's barely seasoned meat cooked on a griddle. It was only the larger ones, like Beck's, or the ones that were grilled over flame like Top Notch that tasted any different.

Never underestimate the value of all the crap they put on the sandwich, and how the bread differs.

The meat at Pappa's Burgers is superior, because it's mostly trimmings from the steakhouse next door.  But mostly you're correct.  A well constructed burger is more than the sum of its parts.

I like In and Out better than Whataburger. But I've only had In and Out three times, I've had Whataburger probably 978 times or more. Locally I like Hat Creek Burgers and P. Terry's Burger Stand. Fresh cut fries, never frozen beef, fresh fixin's. Good burgers, both places. a slight nod to P. Terry's.

Wow. I've eaten there since it was created from the old Burkhart's in the late 60s. Grilled over an open flame, and I'm pretty sure they aren't prefrozen, overcooked or oversalted and they aren't expensive, either. I'm sorry you had bad impressions.

ETA: I guess they could've been frozen, I don't know for sure but I don't remember seeing any frozen patties or racks thawing anywhere.

Yeah, beat me with the roller skate.  I'm fine with that as long as I don't have to eat In & Out again.  And I never said I LIKED Sonic.  I simply that I thought the burgers were comparable. 

There's a Place in North East Dallas, JG's, which is very good.  Chester's in San Antonio is also a family favorite.  But a trip to NY City introduced me to Jackson Hole in the Wall.  I was impressed, but Alkie has offered some interesting criticism on that choice.  I'm not necessarily agreeing, but I'm curious what burger he got, as they have 20+ variations.  I got the Bacon Cheeseburger with cheddar and dijon mustard, which was simply outstanding.

I don't think dijon mustard belongs on a hamburger. I believe once you start adding stuff like blue cheese, capers, sprouts, bbq sauce, chili, or ranch dressing, it ceases being a hamburger and becomes a sandwich with a hamburger patty. In other words a gourmet hamburger is not really a hamburger.

I don't like Dijon on my burger, but I disagree. A nice, grilled burger with Claussen pickles, blue cheese, and grilled onions: great hamburger.

As far as the chains go, it can really make a difference which store you go to. Twenty years ago, Fuddruckers was fantastic. I still have had some pretty good ones, though it seems they have changed the way they process the beef and the condiment bar doesn't seem as impressive. I can't stand the one in Kingwood, though. It just seem to have the same good taste.

The mom and pop places and hamburger stands really can be the best places to go, but I have even found Sonics and Burger Kings that seem to go the extra mile to give good food and service. I've even had bad luck with Chick-fil-A before. It really can come down to haw the store is run, sometimes.

I have no idea how you equate dijon mustard to those other items, which I'd personally never put on a burger (although I have mixed in bbq sauce with the meat, before cooking).  Care to offer an "approved" list of acceptable condiments and toppings (lettuce, tomato, pickles, bacon, etc...)?  If you can provide that, I'll revise my burger recommendations accordingly.

eta:  JG's and Chesters is your typical american burger joint, serving what I think are some of the best burgers around.  Personal tastes being what they are.

To those offering their favorite burger places, may I request that you add some geographical details?  I'd like to know if I'm ever going to have a chance to try some of these places. 

For example, I'm heading to Tempe in the next month or so.  Can anyone offer a recommendation?  I've been there a few times, and found mostly chain type restaurants.  I found a great burger place in OKC, on the mini-river walk area, by Bricktown.  But also looking for recommendations for New Haven, CT.

As for mayo on french fries, move back to Europe ya' big pinko.  Never understood how getting an order of pommes frites in Deutschland would get you a giant glob of mayonaise.  Nastiest thing I've ever had.  No thanks.  Sadly, this phenomenon is not exclusive to Germany.  I got the same issue of unwanted mayo in France, Belgium, and The Netherlands.

That said, Germany is one place I tell them no mustard on the wurst!  They put enough horse radish mustard on their wurst to choke an actual horse.  And I love horse-radish mustard.  Germany also happens to be home of one the best burgers I've ever had.  It had an interesting mix of coleslaw and cooked cabbage (two doses of cabbage in various forms, who'da thunk it.  And yes, their coleslaw had mayo - one of the only times I've enjoyed it on a burger) made for one of my all-time favorite burgers.

Went to school in Winston-Salem, NC which is home to Texas Pete. Always thought it was a curious choice of name. Carolinians are proud of their BBQ, and rightfully so, but every restaurant would have their NC made Texas Pete as the hot sauce of choice. It is good stuff though. Especially with Carolina BBQ.

It didn't seem like they made much effort to sell it in Texas until a few years ago.

Nothing wrong with a little mayo if the situation requires (like in a really juicy burger, as noted earlier), horseradish+mayo on the bottom bun, lettuce, tomato, grilled onion, cheddar & bacon is a hell of a burger.

Anyone tried the Hawaiian sweet burger buns?  When you're in the mood for something different, they work damn well, may not be for everyone though.

Also:  cheese, American or other?  

Also also:  Cajun Power Garlic Sauce is a necessity in any respectable Texas pantry.

Not a fan of too much in the way of sauces, mustard and/or ketchup are fine, but I can do without.  I find mayo in all of its forms to be disgusting, and won't eat it at all.
Cheese?  American is fine, I prefer Swiss or Provolone.
Onion rolls are great.  I like some variety in choice of bread with a burger.
I keep both Mexican and Louisiana hot sauce in the house.  Depends on mood.  Had some Red Baron pizza slices today with Cholula.  Good stuff.

As for mayo on french fries, move back to Europe ya' big pinko.  Never understood how getting an order of pommes frites in Deutschland would get you a giant glob of mayonaise.  

Actually, that is where I am more than half the time (tho not a 'pinko').  I didn't understand it either until I tried it.  Now I understand.

That said, Germany is one place I tell them no mustard on the wurst!

But for the record:
Bun - can be seeded and or grilled or not.
Meat - ground beef.
Garnish - lettuce, cheese, tomatoes, pickles (sweet,dill, sliced, relish), onions, jalapenos, bacon.
Condiments - mustard, mayo, miracle whip, ketchup.
