I found this guy http://web.minorleaguebaseball.com/milb/stats/stats.jsp?n=Brian%20Esposito&pos=C&sid=milb&t=p_pbp&pid=449145 on the Corpus Christi roster at MiLB ... Any info on when he signed or what his role might be??

He is a minor league free agent, and sometimes they'll show up on www.milb.com as part of the team before they are announced.  It would make sense to add him.

Nor do I.  Thus the question.  Of course, it would not be the first time that the MiLB rosters were screwed up, either.  Just wondering.

I don't think it's screwed up.  I think it was such a low level signing no one bothered to release the information.  He'll likely be backing up Koby at Corpus.
