So the Jewish holiday of succot ended tonight. And my wife and I often invite over a bunch of people over to our house after synagogue one of the days for food and drinks.
I served two gigantic platters of frito pie to all of those Yankees and Mets fans. They didn't even know that the very food they ate was supporting the Astros.

I used to make a pretty good vegetarian chili. It was never as good as my meat chili, but it was pretty good. Amy's and Chili Man both make decent canned veggie chili, even better than some of the shitty canned chilis that are supposed to have meat in them.

I used to make a pretty good vegetarian chili. It was never as good as my meat chili, but it was pretty good. Amy's and Chili Man both make decent canned veggie chili, even better than some of the shitty canned chilis that are supposed to have meat in them.
Bob's Red Mill's TVP has a "chili" recipe on the packet that is fantastic. I have made a couple of adaptations to it, but the standard recipe makes a very tasty dish.

"Chili", the dish, is short for "chili con carne", which by definition is "con carne". I'm sure vegetables and chiles are a fine meal, but it's not "chili". "Chili" has a specific definition and ingredient list, first and foremost of which is beef. I can say "I'm making a bacon cheeseburger, but instead of a bun, I use a tortilla, and I substitute grilled chicken for the beef patty...and I add grilled onions and peppers", but it's still a taco.

I love chili and when I think of chili it has meat in it. It’s the only way I make it. I also am not from Texas so when I see a veggie chili cook off here in Hicksville WV (as you’d like to imagine it) I know what genre of food they are trying to create. I know the taste that they’re going for and when done well it ‘ain’t a stew. It’s something with a shit ton of chili’s in it. And beans. It’s spicy. And savory. And it’s not bad to eat when the zombies are out and about.

Pa q sepas, I tremendously enjoy making vegetarian chili with copious amounts of beans, kidneys preferably, but you can go crazy and mix kidneys and black beans if you like to live on the edge. I also add quite a number of tomatoes, canned romas, even, if you were wondering about my redneck bonafides. I used to mix in a couple of jalapenos but now I'd probably use fresh habaneros.
Of course, I also occasionally enjoy a glass of whisky. Or do I like Scotch whiskey? It's been so long I can scarcely remember.

I saw an article once in which Chet Flippo divulged his favorite chili recipe. Flippo was from Texas, and did from time to time kind of style himself (or allow himself the pretension) as being some kind of an authority on many things Texan, I believe. Flippo's recipe, as I recall, contained among other things filet mignon (presumably chopped up), and some kind of chocolate. All those years as a media darling apparently left him effete and pretty fucked up.
Whatever. Being from Texas or not doesn't have everything to do with it. I am in line with the man from FLA (and the man from the happiest country on Earth - Panama) on this. Meat, yes ... beans (and many other things), fuck no.

It seems to me that these questions, like all matters of theology and religion, are ultimately unanswerable. Each of you needs to face the baseball gods and satisfy yourself that you're doing what's needed, understanding all the while that these gods are fickle, cruel, impetuous, and prone to take offense at the slightest bobble. If you can honestly answer that yes, vegetarian chili is sufficient, go for it. If beans are in your chili, this isn't a test of Texanhood and shouldn't be confused with it, even if the practice is barbaric. If for some weird reason you don't like Fritos, ok then.
Just don't blow it.

I think ancho chili and cumin are such a strong and distinctive combination of seasoning that whenever you use them together, the product will be associated with chili whether you like it or not. For instance, if you try to serve something like "Turkey Ancho-Cumin stew" they will say it tastes like "chili" and would be reasonable to do so.

What about over rice? I like chili over rice sometimes. Over elbow noodles occasionally too. Over spaghetti is an abomination with those noodles flopping all over the place and splattering precious chili on your shirt. How about if you throw in some green peppers in along with the chiles? They're both in the pepper group. I had a beefalo chili once. Pretty good although the beef(alo) was a bit too lean. i assume chili over fritos is ok since that is a classic frito pie and a key ingredient is chili. How about dipping scoops fritos into chili? What about crunching fritos up in your chili, as I've seen before. It's basically rough-ground masa. Still chili?

My last frito pie "chili" came squirting from a whirring, clicking chili (and cheese goop) dispenser at 7-11 a block from work because, you know, early afternoon game time starts during the work week... There were no beans. Or ground beef. Or tomatoes. So, I think the diarrhea sludge was surprisingly compliant with the OWA TZ definition of chili.

My Jr year of High School several friends and I started camping out on Lake Sam Rayburn on weekends. By camping I mean sleeping in the bed of a pickup and eating what we caught. Wolf brand chili (w beans!) was our backup option to starving sometimes. For a hungry teenager that stuff was awesome!!!

Ground up fritos or corn chips are actually acceptable in lieu of masa. Rice? GTFOH. Green peppers are actually chiles, so yes they are acceptable. They provide flavor, even if no heat.

One of the good things about her being an Aggie is understanding supporting your team. Standing up during the game and practicing yelling are dumb, but frito pie and rum are serious business. She gets it. I'm grateful for that.

Here's mine, and what I did before the ALDS. I know it's not "authentic" but it did get me invited to Terlingua.
per 2 lbs meat (I like a mix of diced and very course ground, you have to ask the store to grind it as course as they can, unless you have your own). I typically use venison and add some course ground pork belly or butt, but if using beef with a good amount of fat in it you shouldn't need to.
Dutch oven
small food processor (coffee grinder will also work, you may have to use it in batches. Clean out by chopping up cubes of staleish white bread)
2 cups liquid (any combination of water/beer/broth, I use Shiner Black and beef/venison broth)
3/4 teaspoon baking soda
6 dried ancho chiles, 2 dried pasilla chiles and 3 dried red fresnos/chile colorados or comparable, stemmed, seeded and torn into 1" pieces
1/4 c ground tortilla chips
2 T cumin seeds
1 T coriander seeds
1 T each: paprika, dried mexican oregano
1 t fresh ground black pepper
1/2 t dried thyme
2 T beef tallow
1 medium onion, chopped fine
3 garlic cloves, minced
2 T canned chipotle chile in adobo, minced
4 oz tomato puree
2 t sugar
2 T cider vinegar
Heat oven (smoker and a propane camp stove work just the same) to 275 with rack in lower middle. Toss meat with 2 T water, 1 t salt and baking soda and set aside for 30 mins. Baking soda changes the ph of the meat, makes it retain moisture better and brown more evenly.
Heat dutch oven on med-hi heat on the stove, add dried chiles and toast about 5 minutes, stirring frequently, lower heat and remove if they start to smoke. Remove and let cool (makes them crisp up a bit). Add cumin/coriander seeds, toast until fragrant.
Add tortilla chips, toasted chiles and seeds, paprika, garlic powder, oregano, thyme & black pepper to food processor and grind until fine.
Heat tallow in dutch oven. Cook onion until softened, add garlic & cook 1 minute. Add meat and cook until browned & fond (black sticky bits) begins to form on bottom of pot (12-15 mins). Add ancho mixture and chipotles in adobo, mix well and cook, stirring for a couple of minutes.
Add 2 cups liquid, sugar, and tomato puree, bring to a boil, scrape bottom of pot to loosen browned bits, stir, cover & transfer to oven/smoker for 1.5 to 2 hours, stirring every 15 mins to prevent sticking.
Remove from oven, let stand uncovered for 10 mins. Add vinegar and salt to taste, stir. Do not skim off any fat, most spices are fat soluble, so that little orange slick is pure flavor.
Garnish with whatever you want: cheddar/jack/whatever cheese, diced onion, serranos, avocado, lime juice, cilantro.
Serve with whatever you want: fritos, corn chips, beans, rice, cornbread, tamales, crackers

That one's not as complicated as it sounds, 1 trip to the store, 2 hours prep, and it's done 2 hours later. Great for inside rainy/cold winter days.

Not so much about the smoke though you get a little when you stir it, but the smoker and camp stove allow you to cook it when you don't have access, or don't want access, to an indoor kitchen.

Thanks. I have a smoker on the back porch. And my wife always complains when I use it because she says she can smell the smoke in the house for days afterwards. When I make chili indoors, however, she doesn't complaint at all. Maybe its because she just likes my chili more than the smoked brisket.

I had last has Frito Pie in '15 on the day of Game 4. I had completely missed to daytime start and had just finished a "big hot steaming bowl" when I turned on the TV only to find my mistake and learn of the events of that game.
In 2017 I never touched the stuff. Then after the multi-dimensional cluster-fuck of Game 4 this year I thought maybe to re-boot the mojo I should try it again. So, I carefully checked the game time and went to the local market. I selected an onion, a block of cheese, a bag of Fritos, and a can of Hormel chili. No Wolf Brand, but I soldered on. Stack up at the express line so I selected a standard line with only two customers. The first customer was heavily laden with coupons and still wielding a check book, no problem, I've got time. When the customer just before me is almost entirely checked out there's a power failure. We wait. We check the power company's website on our phone for some idea when we might get it back but you never know around here. SDGE has almost third world reliability and it could be five minutes or five hours. I decide not to wait. There's another store not too far away that has power so I leave my basket of Frito pie ingredients and head out. I get the same basket of ingredients at the new market but they don't have Wolf Brand either. The nice lady at the check-out sees my Astro shirt and says "I hope they win, that should have been a home run". I thank and agree with her and head out. I should have just enough time for pie before first pitch, but by the time I get home the power outage has hit my house and I have an electric stove. I chop the onion and grate the cheese. I plop the chili out of the can and into the pot like knarley brown cranberry sauce with a schloop! sound and wait. Just in time the power is restored and the brown mass heats to a thick mush. I assemble a text book pie and wolf it down while the satellite re-boots. We both finish just before first pitch. The first inning goes O.K., but the combination of canned chili and elimination game jitters is a recipe for gastric "discomfort".
The universe was trying to tell me something and I simply wouldn't listen. I have eaten my last Frito pie.
