Because I like burnt ends I add a little brown sugar to my kosher salt and course ground black pepper mix.

I add a little garlic powder and a little paprika. But this is Texas. Black pepper. Fresh cracked.

I’ve been happy with it.
I made a brisket last weekend using this recipe and method, and it was so good it gave me gout.
Well I've actually had gout since my 20s, but this fucking triggered it. But my new rheumatologist knows the cure -- six days of methylprednisolone. After 35 years of dealing with this shit, finally someone solved it for me. Now I know that if I want a weekend brisket, I just need to be ready to call my doctor for some steroids on Monday. Co-pay the piper, if you will.

You can also take colchecine after an attack, but it gives you the shits.

Yeah, I take it every day and it has reduced flare-ups. But this brisket was so good, it powered through the allopurinol defense anyway. And I honestly didn't even eat that much.
