Seeing those awful looking nachos reminds me, I made the carrots the other day. They turned out as well as you might imagine. I significantly upped the heat of course. I'm usually not a recipe sort of guy but I'd have no idea how to ratio the water and vinegar and so on.

I don't LOVE curtido, but it was what introduced me to spicy foods when I was a child and of course I now am especially attentive to responsible parenting.
